On your wedding day I will give you a "Record of Solemnization" to confirm that I married you, signed by me and by your witnesses. However, you will need to apply for a Certificate of Marriage from the Province of Ontario via internet as soon as possible after your marriage. Ontario tries to prepare this certificate within three months after your marriage.
Marrying in Ontario before leaving Canada ensures that your marriage is legally recognized here, and avoids additional costs for translation, etc. on your return.
Legal marriage before travelling also reduces problems arising from accident or sickness en route or in the foreign country.
A simple, private signing can be arranged before travelling.
This link to a Canadian Government site discusses some of the issues of foreign marriages.
